Transmission Colorimetry of Juices: Color Measurement of Transparent and Translucent Liquids

Date:2025-03-12 Hits:449

The color of juice not only affects consumers' first impression, but is also closely related to the product's sensory quality, ingredient stability, and market competitiveness. Transmission colorimetry is an accurate color control technology, especially suitable for transparent and translucent liquids. 3nh liquid colorimeter and spectrophotometer can help food manufacturers ensure product color consistency and improve quality management.

Apple juice is very clear, so it is suitable to measure its color value in transmission mode.

Basic Principles of Transmission Colorimetry

Transmittance chromaticity refers to the degree to which light is absorbed and scattered when passing through a liquid, which directly affects the visual color of the juice. The following parameters should be paid attention to when measuring:

Transmittance (T%): The percentage of the transmitted light intensity after the light passes through the sample to the incident light intensity. Transparent juice has a high transmittance (such as apple juice T%>90%), while turbid juice has a low transmittance (such as orange juice T%<50%).

Chromaticity coordinates: Quantitatively describe color using the CIE Lab or Hunter Lab system:

  • L* : Lightness (0 is black, 100 is white).
  • a* : Red-green axis (positive values are redder, negative values are greener).
  • b* : Yellow-blue axis (positive values are yellowish, negative values are bluish).

Transparent and translucent liquid color measurement method steps :

a.Sample preparation:

Pour the juice into a transparent cuvette, making sure there are no bubbles or impurities interfering with the light path. For transparent juices (such as grape juice), you can measure directly; for translucent or pulpy juices (such as aloe vera juice ), you may need to filter or dilute to reduce light scattering.

b.Spectral measurements:

A spectrophotometer or liquid colorimeter transmits light of known intensity through a juice sample and records the transmittance at each wavelength. Transmittance is usually expressed as a percentage, for example 100% means complete transmission and 0% means complete absorption.

c.Color calculation:

Based on the transmission spectrum data, color coordinates are calculated (such as L* for lightness, a* for red-green axis, and b* for yellow-blue axis). These coordinates can be compared with industry standards or target values , and the measured data can be saved in PeColor Color Matching Systems to establish a color library for management.

d.applicability

Transparent liquids: such as clear apple juice or lemon juice , scatter less light and provide more accurate results.

Translucent liquids: such as grape juice or sugar cane juice , light scattering may increase errors and require special handling.

Translucent juice such as sugarcane juice needs special treatment

Juice Color Control Applications

The primary purpose of transmittance colorimetry measurements is to support quality control and ensure that the color of the juice meets predetermined standards. Manufacturers can leverage these measurements with 3nh PeColor Color Matching Systems in the following ways:

  • Establish a standard color profile: By measuring the initial batch or ideal sample, determine the target color coordinates as a benchmark for subsequent production.
  • Batch-to-batch comparison: Color is measured after each production run and compared to a standard to ensure consistency . If deviations are found, corrective action can be taken.
  • Process Adjustment: Based on the measurement results, the production process is adjusted, such as changing the fruit blend, modifying processing conditions or adding color correctors to achieve the desired color.
  • Long-term monitoring: Regular measurements are taken to monitor color changes over time and detect any potential problems such as deterioration in raw material quality or aging of processing equipment.
